Yonsei Barrel Project

Last year we traveled to Kentucky to partner with Woodford Reserve to select a bourbon barrel with caramel, toasted oak, and vanilla notes that echo the umami and smoke in our food. It is Double Oaked, a secondary maturation process in a lightly charred barrel that boosts richness and smoothness — like tare or nikiri, more depth, more length, more character.
